The meandering Lachlan River is the unique location for an exciting new food event, Grazing Down the Lachlan.
Chairperson of the event, Wendy Muffet, is excited to be bringing this dream to fruition, with a desire to support the ‘Somewhere Down the Lachlan’ Sculpture Trail.
“We wondered how we could best use such an event to capture the essence of our western rural life,” Wendy said, “The food will be authentic, of the place, and sophisticated in its simplicity.”
The event will see people transported in stages by bus from Forbes to the site.
Guests will be welcomed to country and then wander along a designated corridor of the reserve enjoying a variety of dishes, each with a matched beverage. Guests will then be transported by bus back to Forbes on dusk.
Renowned Sydney chefs O Tama Carey (Chef and SBS food writer) and Mat Lindsay (Ester Restaurant & Bar) are planning a diverse and creative menu.
On a recent visit to the site, and in planning the menu, O Tama revealed their desire to cook with native ingredients.
“Having the opportunity to use local indigenous ingredients, that we don’t normally have access to, is incredibly appealing to us,” she said.
In terms of the outdoor river setting, rather than simply delivering dishes from a stall, O Tama and Mat plan to “use and incorporate the landscape as much as possible.”
Focusing on foods native to the Central West region, the degustation menu will be prepared and delivered by local restaurateurs and caterers.
