The program for this year’s event was officially launched today, with Mark set to deliver a fusion of native food and culture with contemporary lifestyle cooking to the foodie adventure on 22 September 2018.
Mark, who is best known as “The Black Olive”, host of The Outback Café television series and judge on The Chef's Line cooking competition, is set to create a seven-course dining experience comprising of gourmet indigenous cuisine.
“I love the idea of meandering down the river, enjoying good food and wine,” Mark said.
“In designing the menu, I hope to speak with the local indigenous community and regional producers to learn more about the produce, proteins and wines grown in the area.
“I will draw on my experience and curiosity for food to get creative – working with texture, colour and palate.”
Set along the Lachlan River, guests are free to wander along the designated corridor of the nine-mile reserve between seven stations offering delicious food with a matched beverage.
Focusing on foods native to the Central West region, the degustation menu will be prepared and delivered by local restaurateurs and caterers.
A sophisticated fusion of locally farmed and foraged produce, with traditional bush tucker, ensures the dishes created will deliver on the promise to be a memorable and unique experience.
Following the success of the inaugural event in 2017, with over 700 people in attendance, Grazing Down the Lachlan will return in 2018 with a new and exciting collaboration of regional producers.
Chair of the Grazing Committee, Wendy Muffet is excited to be bringing the unique dining experience to fruition for the second year.
“This year’s program is set to further enhance our vision to celebrate and showcase locally foraged and farmed produce,” she said.
“Mark will complement the creative line up of local producers in his curation of this extraordinary culinary experience, and we are delighted to give ‘Grazers’ the opportunity to meet Mark and several of the farmers at the Meet Your Maker Q&A evening on Friday 21st .”
