Bruce first started working in the bakery section of Bernardi's at their old location in 2000 before briefly changing professions for a while where he worked at a couple different hotels.
He returned to work at Bernardi's in 2012 at their new location on Lachlan Street as the Bakery Manager.
Before being asked to work in the bakery section in 2000, Bruce said he never had any baking experience and had to learn on the job.
"I trained for about two weeks and I was hopeless. I was lucky enough to be introduced to a rep by the name of Rob Vels - he's the guru of bakers," Bruce said, "He can teach anyone to bake and taught me to bake."
Over his time, Bruce has passed on the skills he's picked up and seen an increase in kitchen size and different trends emerge in the industry.
Bruce said they've seen a diversification of bread lines and different grains they've baked over the years.
"There's a lot more exotic - what I would call metropolitan influence which has now come in with bread lines that are in."
Bruce said he has really enjoyed his time working for the Bernardi group and working with the customers.
Bruce said he plans to play more golf and back more winners in his retirement.
Bernardi's Co-CEO Joe Bernardi said that Bruce has been very loyal and friendly and has been a pleasure to work with over the years.
Mr Bernardi said he always had a smile on his face and and they will miss working with him.
