The head chef and owner of Ester Restaurant and Bar in Sydney happened to be in Forbes when the announcement was made last week.
Chairperson of the event Wendy Muffet wasn’t surprised he took out the top award.
“Mat was sitting in my car when he was notified, it was a very exciting moment. I told him I would get him back to Sydney on a plane that afternoon.
“He said, ‘No, I am out here to do the job for Grazing Down The Lachlan’. So he missed the award ceremony, because he had promised us he would be here,” Mrs Muffet said lightheartedly.
Lindsay, alongside chef and SBS food writer O Tama Carey are in charge of planning a diverse and creative menu for the September 23 event along the Lachlan River.
The duo were in town for a trial run of the event last week, stepping through each aspect of the day and fine tuning the dishes.
“They are both highly awarded chefs, so we always felt like we were in very safe hands,” Mrs Muffet said.
“They wrote the recipes for Grazing Down The Lachlan and coached local caterers on how to deliver them. They were very impressed with the standards of the local caterers’ work at the trial run.
“Having someone with a profile of O Tama and Mat and pairing them with Forbes, has got to be good for the town.
“There’s no event like this out there, I think O Tama and Mat were excited to be the creative force behind the event.”
