The team was comprised of boys from around the Central West including Forbes, Dubbo, Mudgee, Wellington, Canowindra, Orange and Bathurst, with most making their debut into representative rugby this year.
Head Coach Rob Nixon said it has been a fantastic year for the team.
"They have worked so hard and really deserved this outcome," he said.
The Central West U12 Bulls, through their drive and determination, were able to come away from the two day event undefeated and bringing the trophy to the Central West.
Also fielding teams in the in Southern State Championships were the ACT Barbarians, Southern Inland Rugby Union and South Coast Monaro.
Oliver Walker said it was a great experience for them to take part in and they had fun playing.
Showing strong defence, Central West were also able to keep all teams scoreless against them until the finals, which saw Central West get the win over Southern Inland Rugby 19-7.
Forwards coach Will Gaden said the fact that they only had their line crossed once during the championships was a pretty special thing.
"The boys have been working hard all year and their defence has been improving consistently, which was evident over the two days in Canberra," he said.
Charlie Francis said they were going so strong in some of the games they had to implement the mercy play where they removed a player from the field during play.
The Central West U12 Bulls have had a busy year with players competing in Japan at the Kids Rugby World Cup, Country Championships, State Championships and the Southern State Championships.
To top the year off the boys will be also heading to Sydney for a friendly Bush2Beach match against the Warringah Rats on September 19.
Mr Gaden said he hopes for the Bush2Beach match to become an annual game with the Central West hosting Warringah next year.
The boys also play in the Forbes Under 13s squad and are pretty confident that they will make it into the semis.
